While traditional Italian pasta is often served with tomato sauce, nowadays, you can experiment with various diverse flavors like cream sauce, seafood sauce, or vegetarian Italian pasta. Why not start with a simple recipe like creamy mushroom Italian pasta?
Ingredients for 2 servings
- 100 – 150g fresh porcini mushrooms (you can use porcini, oyster mushrooms, corn mushrooms, etc.)
- Cheese sauce (readily available at supermarkets)
- Olive oil
- Unsalted butter
- Salt, pepper
- 150g Italian pasta (you can choose penne or spaghetti as you like)
- 100g shrimp, peeled and deveined

Instructions:
Step 1: Boil a large pot of water to cook the pasta, add a pinch of salt once the water is boiling. Drop the spaghetti into the pot, gently push it down to let the pasta sink on its own.
Cooking time ranges from 8 to 12 minutes depending on the type of pasta, refer to the packaging for the most accurate timing.
Step 2: While waiting for the pasta to cook, prepare the other ingredients:
-Slice mushrooms, wash thoroughly, and slice (if using corn or oyster mushrooms, just trim the stems, cut into small pieces, and wash thoroughly)
Step 3: Heat a pan, melt butter in the pan, then sauté the mushrooms until tender, add a pinch of salt and pepper to taste, then add the shrimp, and stir well.
Continue by adding cheese sauce to the pan, cook over medium heat for 3 to 5 minutes, stirring occasionally until the sauce thickens. (You can add a hint of finely chopped parsley for a distinctive aroma)

Step 4: When the pasta is cooked, drain it in a clean colander quickly, shake gently to drain excess water, transfer it to a bowl, add 1 tablespoon of olive oil, and toss gently to prevent the pasta strands from sticking together.

Step 5: Transfer the pasta to a plate, top it with the creamy mushroom and shrimp sauce. Mix well before serving hot.
