Ingredients:
1 ripe pineapple (about 700 grams)
100-120 grams of sugar
2 tablespoons of lime juice
1/2 teaspoon of salt
2 tablespoons of honey or molasses
Procedure:
Step 1: Peel and remove the core from the pineapple. Then put all of the pineapple into a blender and blend for 1 minute. No need to blend it completely smooth, so you can chop it if you prefer.
Step 2: Transfer the blended pineapple mixture to a pot along with sugar, salt, and lime juice. Place it over medium heat for 10 minutes. Then reduce the heat and simmer until the mixture slightly thickens. Add honey or molasses and continue to simmer until the jam is thick and sticky enough to coat the back of a spoon. Then turn off the heat.
Step 3: Scoop small portions of the jam onto a tray greased with a little oil. Let the pineapple cool then shape it into round balls. Roll them in small sugar crystals.
Note: Pineapple jam needs to be cooked thoroughly to prevent it from becoming watery when stored for a long time.
