How to Make Tamarind-Glazed Fried Tofu:

Step 1: Rinse the tofu to remove any dust, then cut it into bite-sized pieces. Place them on a cloth to absorb excess water, preventing oil splatters during frying.

Step 2: Pick and wash the green onions, draining them before cutting off the white ends and chopping finely.
Step 3: Pour fish sauce into a bowl and add the finely chopped green onions, stirring well.
If you don't prefer it too salty, you can mix fish sauce with water in a 1:2 ratio. Additionally, you can combine fish sauce, sugar, and water in a 1:1:2 ratio. Adjust according to your family's taste preferences.

Step 4: Heat oil in a pan until hot, then fry the tofu until golden brown on all sides. Once golden, remove the tofu and dip it into the prepared fish sauce bowl.

Step 5: Dip each golden-brown tofu piece into the fish sauce, then place on a plate for enjoyment.

Step 6: Presentation and Enjoyment
Savor the tamarind-glazed fried tofu while it's still hot. The crispy, fragrant, and hot golden tofu, with its crispy outer layer just after frying, carries the aromatic scent of green onions and the rich flavor of fish sauce. It's a perfect match with rice.
