Encounter with Turnip Cakes at a Hong Kong Dim Sum Buffet – Ngọc Mai Đỏ Hotpot
When invited by a little friend to a dim sum buffet, hotpot at Ngọc Mai Đỏ, I initially declined: “Dim sum and hotpot, too expensive!”. However, after persistent persuasion, I ended up being dragged to the 16th Floor of Ruby Plaza to accompany them for a meal without any compensation!

Aside from dimsum, I discovered that there's more to enjoy at the Hong Kong buffet, including hot pot, skewers, stir-fries, steamed dishes, and more. From chicken feet to desserts, it's a Hong Kong culinary adventure that leaves you happily exhausted.
...turns out the Ngọc Mai Đỏ buffet offers far more variety than I initially thought!

Despite the plethora of delicious options at Ngọc Mai Đỏ, the dish that truly stood out for me was the fried turnip cake. Despite being deep-fried, it manages to avoid feeling greasy. Each bite reveals a crispy exterior giving way to a sweet, flavorful, and irresistibly soft turnip filling. It was so good that I immediately sought out a recipe to recreate it at home!
However, upon arrival at the party, I realized I had made a grave mistake. Apart from dimsum and Hong Kong hot pot, there was also congee, soup, skewers, stir-fries, and steamed dishes such as braised chicken feet and desserts—all authentically Hong Kong. In short, it was a feast that left me both satisfied and wanting more.

I fell in love with the turnip cake at Ngọc Mai Đỏ!
If you have the opportunity, I highly recommend trying the turnip cake at Ngọc Mai Đỏ at least once. Rumor has it that the head chef is a Hong Kong native with over 20 years of experience, making it an unforgettable experience. And if you ever crave it but can't make it there, like me, you might attempt to make it yourself—it won't be as good, but it'll satisfy the craving!
Traditional Hong Kong Turnip Cake Recipe
Ingredients: white turnips, rice flour, Chinese sausage, dried shrimp, shallots, seasoning powder, cooking oil, salt, sugar, dried mushrooms.
Firstly, peel and wash the turnips, then thinly shred them and mix in a bit of salt. After about 20 minutes, squeeze out the excess water from the turnips.
Combine the drained turnip with rice flour in a bowl using a ratio of 2 parts water to 1 part flour, adding a pinch of salt and pepper, and mix well.

Thinly slice the turnip.
Thoroughly clean and soak the dried shrimp and mushrooms until soft, then chop them finely along with the shallots and Chinese sausage.
Heat the oil and stir-fry the dried shrimp until fragrant. Then add the shallots and Chinese sausage, stir-frying until cooked through before removing from the pan. Sauté the garlic until fragrant, then add the mushrooms followed by the shredded turnip. Season with fish sauce, salt, and pepper to taste. Stir for 1 - 2 minutes before adding the mixture of shallots, shrimp, and Chinese sausage, stirring to combine. Slowly pour in the rice flour mixture, stirring constantly until you achieve a smooth, homogeneous mixture.

The steps are quite simple.
Transfer the mixture into molds/trays/bowls as per your convenience, using a flat spoon to flatten the surface. Seal tightly with aluminum foil and steam using a steamer/electric rice cooker for about 30 minutes.
Once the steamed cake is cooked through, remove it from the heat, allow it to cool, then cut it into small pieces. Fry the pieces in hot oil until both sides are golden brown, and you're done!

You can enjoy this dish with either honey or spicy sauce, depending on your taste preferences, for an extra delicious touch.
This cake dish boasts simple ingredients and is relatively easy to make, though it may seem a bit daunting. Nevertheless, it offers a superbly delicious, clean, and refreshing taste. For the best flavor experience, I recommend trying the authentic version at Ngọc Mai Đỏ at least once to learn from the experts. It's guaranteed to be an unforgettable culinary delight!
