Method:
For the beef:
- Wash the beef under cold water and pat it dry with paper towels.

- Then use a knife to slice the beef into thick slices, about 0.7cm thick, making sure to slice against the grain for better results.

For the seasoning mixture:
- Wash the lemongrass and ginger, then let them dry.
- Remove the old leaves from the lemongrass, cut off the root end, and lightly crush it with a knife.

- Finally, mince these 3 ingredients until smooth.

Marinating the beef jerky:
- Finely mince all the garlic, lemongrass, ginger into a bowl with five-spice powder, chili powder, sugar, and salt.

- Then put the prepared beef into a bowl with the spices, put on gloves, gently massage the spices onto each piece of beef so that the spices are evenly absorbed.
- Use plastic wrap to cover the bowl tightly and put it in the refrigerator for about 8 to 10 hours (preferably overnight), to allow the spices to fully penetrate into the beef.

Step 1: After marinating the beef for the specified time, take out the marinated beef and put it in a pot, then place it on the stove to simmer. Keep the pot uncovered to allow the water to evaporate more quickly.

Step 2: Continue simmering until all the water has evaporated, and the beef becomes firm with the lemongrass and chili sticking evenly to the surface, then turn off the stove and transfer the beef to a plate.
