Having frequented Bồ Đề Tâm on numerous occasions, I've mastered the art of preparing delicious vegetarian dishes at home. Today, I share the recipe for tofu spring rolls with tangy honey and rich lime sauce, a renowned and mouthwatering vegetarian delight from the restaurant.
Guide to making Tofu Spring Rolls with Mango (8 rolls ~ serves 2)
Ingredients: 1 sheet of tofu skin (used for dim sum rolls), 1 sheet of golden-fried young tofu, approximately 100g enoki mushrooms, 8 sprigs of fresh baby bamboo shoots, 1 carrot.
To make the sauce, prepare 1 tablespoon of minced shallots, 2 tablespoons of honey, 2 tablespoons of lime juice, a pinch of cornstarch, and about 120ml of filtered water.
Start by cutting the tofu sheets into rectangular pieces, each measuring 16cm in length and 12cm in width. Slice the fried tofu into 8 small pieces along the vertical direction.
Peel and julienne the carrots into thick strips, blanching them in boiling water until tender. Cut the mango in half and briefly blanch it in hot water.

Prepare the ingredients with a quick prepping session.
