Pour oil into the pan, heating it to a temperature of about 70 – 80°C. Check the oil temperature by breaking a piece of cake into it; if the cake floats, it is ready. After frying, place them on a plate lined with absorbent paper to drain excess oil.
- Step 5: Prepare the crispy rice sauce
Heat the pan, add: 2 teaspoons finely chopped scallions, 1 teaspoon fish sauce, 1 teaspoon cooking oil, ½ teaspoon bouillon powder, 2 tablespoons sugar, ½ teaspoon minced chili, 2 tablespoons filtered water. Stir well, bring to a boil, and pour into a bowl.
