PREPARING INGREDIENTS FOR BLACK BEAN SAUCE SHRIMP DISH
• 400g peeled and cleaned shrimp
• 100g ground pork
• 1 1/2 tablespoons fermented black beans or can be substituted with black bean sauce
• 1 tablespoon Thiệu Hưng rice wine
• 1 clove garlic (finely minced)
• 1/4 teaspoon ginger (finely minced)
• 1/4 cup diced green bell pepper (finely chopped)
• 2 1/2 tablespoons cornstarch
• 1 beaten egg
• Chopped green onions
• Cooking oil
Stir-fry sauce:
• 1/2 cup chicken broth, 1 tablespoon oyster sauce, 1 tablespoon soy sauce, 1/2 tablespoon sesame oil, 1/4 teaspoon sugar, 1/8 teaspoon white pepper

PROCESS OF MAKING BLACK BEAN SAUCE SHRIMP
Step 1. Prepare the ingredients
Peel the shrimp, remove the head and black vein on the back. Make a shallow slit along the back of the shrimp to allow them to curl nicely when stir-fried. Rinse the shrimp with salt water, then drain.

Rinse the fermented black beans through a sieve and wash them thoroughly with water.

Mix cornstarch with 2 tablespoons of water until smooth.
Step 2. Prepare the stir-fry sauce
Heat chicken broth and add the other sauce ingredients mentioned above, stir well. Set aside.
Note: This sauce can be used for many stir-fry dishes, you can make extra and store it in the refrigerator for future use.

Step 3. Blanch the ground meat.
Bring water to a boil, add the ground pork and stir well, cook for about 1 minute until the pork is no longer pink.

Skim the meat through a strainer and set aside. (You can also rinse the meat to remove any foam or debris that may cloud the sauce.)

Step 4. Shrimp sauce
Heat the pan. Add oil, garlic, ginger, bell pepper, fermented black beans, and ground pork. Sauté for 20 seconds.

Then add the shrimp and pour Thiệu Hưng rice wine around the pan. Sauté for another 20 seconds.

Stir the sauce mixture well to ensure everything is thoroughly combined and add it to the pan. Simmer over low heat.

Gradually add cornstarch mixture and stir until thickened to your liking (you may not need to use it all). If it's too thick, simply add a little chicken broth or water. If it's still too thin, add more cornstarch mixture.

Pour beaten egg evenly over the surface of the sauce. Simmer over low heat for 10 seconds to set the egg, then use a spoon to mix evenly.

Add chopped green onions, stir well, then turn off the heat.


Step 5. Presentation
Place the shrimp on a plate, enjoy immediately with hot rice.
