When it comes to Japanese cuisine, it's renowned for dishes that emphasize fresh, delicious flavors rather than heavy use of spices. Japanese dishes are often refreshing, subtly sweet, and harmonize with nature.
Japanese people highly value guests visiting their homes, often making Datemaki as a gesture of goodwill towards their esteemed guests. While traditionally prepared using a specialized pan, in Vietnam, alternative methods have been devised to preserve its distinctive flavor.
Firstly, to prepare this dish, we require a square pan.

Following that is the ingredient preparation stage:
- 5 chicken eggs
- 50g sugar
- 45ml Dashi broth
- 45ml Mirin rice wine (substitute with sake if unavailable)
- 5g salt
- Japanese fish cake Hanpen (or Vietnamese fish cake)
Steps to Prepare Datemaki
Step 1
Mix the rice wine with Dashi broth, sugar, and salt, then pour into a blender. Once the mixture is smooth and the fish cake is thawed, add both the fish cake and eggs, and blend for 10 seconds.

Step 2
Pour the mixture into a pan. Blending in the blender will give the eggs a soft, natural fluffiness, making it very moist when eaten.

Step 3
Lower the heat slightly, cover the pan tightly with aluminum foil to evenly cook the eggs and fish cake from inside out. Do this for about 5 minutes.

If your family has an oven, pour the mixture into a baking tray and bake at 180°C for 15 minutes for a simpler option.
Step 4
Place the cooked egg piece on a bamboo mat, tightly roll it with your hands, then cut into bite-sized pieces.

Step 5
Depending on your preference, decorate in a visually appealing way to welcome your esteemed guests.
