Friedlieb F. Runge, a German chemist, is hailed as a pioneer in caffeine experimentation. As early as 1820, he successfully isolated caffeine from coffee beans.
Building upon this foundation, by 1906, Ludwig Roselius, a coffee merchant, secured the first patent for a commercial process to produce complete decaf coffee.
His method involved boiling coffee with certain specialized acids, followed by using benzene compound to decaffeinate. However, it was rejected due to health standards as benzene is a carcinogenic substance.
3 Modern Methods of Decaf Coffee Production
All contemporary decaf coffee production processes share the following characteristics:

When it comes to decaf coffee packaging, if you see the phrase “naturally decaffeinated”, it means the product is made using a solvent-based method.
2. Swiss Water Process
This method was conceived in the 1930s in Switzerland, hence the name. Swiss Water relies on the solubility and permeability of caffeine to remove it from coffee beans, without any use of chemical additives.
Initially, coffee beans are soaked in hot water to break down caffeine within this aqueous environment. However, not only caffeine but also sugars and other flavor compounds that contribute to the characteristic taste of coffee are also removed in the process.
If so, then initially coffee beans are merely dry husks, where is the flavor to brew? In truth, everything has been meticulously calculated!
Following the above step, solution 1 (containing water, caffeine, sugar, and coffee flavor compounds) is poured through a filter made from charcoal.
Due to the chemical properties of charcoal, caffeine molecules are retained in the filter, while other components pass through easily. Thus, we obtain solution 2 containing only water, sugar, and coffee flavor compounds.
This solution 2 is then used for resetting, returning to the heating and soaking process with a new batch of raw coffee beans.

Decaffeination process can be carried out in various ways.
At this point, as the solution is saturated with sugar and coffee flavor from batch 1, only caffeine from batch 2 is separated. Thus, batch 2 retains the original coffee flavor profile.
Complex and intricate as it may seem, this method is extremely safe as it involves no chemical agents, yet ensures nearly 100% retention of the coffee flavor.
3. Utilizing Liquid CO2
This is the most modern method, frequently employed in industrial and commercial scales, as it offers cost-effective implementation while ensuring productivity.
Raw coffee beans are placed into a sealed steel chamber, completely isolated from the external environment. Subsequently, liquid CO2 is introduced to initiate the process.
The chemical properties of liquid CO2 allow it to selectively bond with caffeine, without affecting other components. The pressure inside the chamber is adjusted to 1000 pounds per square inch (equivalent to 70 kg/cm2) to enhance caffeine removal efficiency.
After successful caffeine extraction, the chamber space is returned to normal pressure. Liquid CO2 transforms into a gaseous state and automatically evaporates from the coffee beans.
The CO2 gas portion will be recaptured and reused for subsequent cycles, which is also why this method is significantly more cost-effective while maintaining effectiveness.
The Effects of Decaf Coffee on Health
Although the caffeine content is significantly reduced, the nutritional and anti-aging components remain intact, or vary very little.
Therefore, decaf coffee remains a reasonable choice considering the health benefits, particularly related to cardiovascular diseases, cancer, or diabetes.

Individual tolerance to caffeine varies greatly. Sometimes, one cup is more than enough for you, while others may drink 2-3 cups of coffee a day without any issues.
Of course, adhering to the recommendation of 400mg of caffeine per day is still advised by many health and medical experts.
You may experience coffee intoxication when you reach the body's caffeine intake limit, or even suffer life-threatening symptoms due to uncontrolled overdose. In such cases, the harm caused by coffee becomes quite complex. From increased blood pressure, rapid heartbeat, insomnia to various other possible health conditions.
It cannot be denied that coffee is one of the healthiest beverages, offering numerous health benefits. It's just unfortunate that not everyone is blessed with the ability to enjoy coffee equally.
