1. Making Lotus Seed Milk with Pandan Leaves and Palm Sugar
Ingredients:
- Fresh Lotus Seeds: 200 grams
- Filtered Water: 1 liter
- Unsweetened Fresh Milk: 2 packets (220 ml each)
- Salt
- Palm Sugar: 50 grams
- Pandan Leaves: 2 stalks
Instructions:
- Rinse and cut the pandan leaves into small pieces, about 5 cm each.
- Blend the pandan leaves with some water until smooth. Strain the pandan juice through a sieve to extract the liquid.
- Prepare the lotus seeds as in step 1.2. Steam the lotus seeds until cooked.
- In a pot, combine water, fresh milk, lotus seeds, a pinch of salt, and finely chopped palm sugar. Bring to a boil. Once boiling, reduce the heat and simmer for about 5 minutes.
- After cooking, use a hand blender to blend the mixture until smooth. Alternatively, strain the mixture through a sieve to extract the liquid. Then, mix the strained liquid with the pandan juice, stirring well to combine.
- Once thoroughly mixed, pour the milk mixture into glass jars and store in the refrigerator. Enjoy chilled.
