After reading some reviews, I became curious and wanted to try it. Went to the Royal buffet last weekend with friends, I was determined to find it and try it out. Indeed, it lived up to its reputation. The small pieces of crab paste were fried or grilled to a golden color, not greasy at all. Instead, they were sweet, fragrant, slightly crispy, which prevented any feeling of heaviness.
I only took 2 pieces to try on the first round, but on the second round, I bravely took 5 more pieces to entice my companions. Everyone praised it highly: “It's definitely different from homemade.”

After patiently waiting and anticipating, when this dish was finally replenished, a few of us rushed to inquire with the young man dressed in white chef's attire who brought it out about the recipe. After some persistent pleading, he finally relented and shared. Quickly took notes to share with other ladies to try making it themselves.

Later, I found out that he was none other than the head chef (so lucky!) Tran Van Diep of the restaurant. He had worked for over 10 years at the 5-star Prentan Partl Hotel in Bangkok, Thailand.

After many years working in various restaurants and hotels abroad, gaining expertise in Asian culinary cultures such as Malaysia, Japan, Korea, and China, he returned to Vietnam in 2007. He has also participated in culinary TV shows such as “Weekend Chef”, “Three Regions Delicacies Club” to teach cooking secrets to everyone.

And here's how to make delicious crab paste just like at Royal Buffet – truly fit for royal standards.
The ingredients for crab paste:
Brick crab: 1 piece
Crab paste: 200 grams
Vermicelli: 30 grams
Wood ear mushrooms: 3 pieces
Chicken egg: 1 piece
Seasonings: salt, pepper, MSG, seasoning powder
How to prepare steamed crab paste:
Step 1: Use a sharp knife or pointed end of scissors to pierce the hollow near the crab's gills, then place the crab in a pot and simmer until cooked through, allowing the crab to release its own juices.
Step 2: Once the crab has cooled, separate the crab eggs and meat. Then, clean the crab shell thoroughly to be used for stuffing.
Step 3: The filling for the crab paste includes crab meat, crab paste, wood ear mushrooms, crab eggs, chicken egg, and finely chopped vermicelli. Add a pinch of MSG for a richer flavor.

Step 4: Mix the filling thoroughly until it becomes sticky and cohesive, then stuff it into the cleaned crab shell. Use a spoon or spatula to smooth the surface of the mixture.

Step 5: After stuffing, wrap the crab paste in aluminum foil and steam for 25 minutes or microwave on high power for about 5 minutes. If using a microwave, remember to wrap the crab paste with plastic wrap before microwaving. If you don't have a microwave, steam the crab paste until cooked, then fry until golden brown and shiny.
