– 2 slices of tuna
– 100g aromatic herbs
– 50ml coconut water

Preparation of ingredients:
– Prep tuna: rub lime or salt into the fish's belly to remove fishy smell, then rinse thoroughly. Drain water, cut into thick slices about 2cm thick.
– Peel and rinse shallots, finely chop.
– Wash and slice herbs, cut into bite-sized pieces, marinate with 2 tablespoons of sugar for 10 minutes.

How to make fragrant tuna stew:
Step 1: Marinate the fish
Marinate the fish with seasoning powder, salt, chili powder, a bit of sugar, and ½ tablespoon of fish sauce. Add chopped chilies and scallions, mix well to let the fish absorb the seasoning. Marinate for about 10 – 15 minutes.
Step 2: Fry the fish, flavor the dish
– Heat enough oil in a pan and fry the fish until golden on both sides. Transfer the fish to a plate, let it drain excess oil. The golden-brown fried fish will be fragrant and visually appealing when stewed.

– After marinating, transfer to a hot pan, add 50ml coconut water, simmer over low heat for about 5 minutes until fragrant and tender, then turn off the heat.

Step 3: Stew the fish
– Heat a pot, add cooking oil and boil 1 tablespoon of sugar to make caramel. When the sugar turns brown, add the fried tuna. Pour in the remaining coconut water, add herbs, chopped scallions, chili paste, and 1 tablespoon of chili powder to make the fragrant tuna stew visually appealing.

– Simmer gently over low heat, adjust the seasoning with 2 tablespoons of fish sauce, 1 tablespoon of MSG, 1 tablespoon of MSG, and ½ tablespoon of sugar. When the stew is reduced to about half, the fish is cooked and visually appealing, sprinkle some ground pepper and turn off the heat.
