1. Teriyaki Glazed Spare Ribs
Ingredients:
- 400g pork spare ribs
- 310g Teriyaki sauce
- 3 shallots
- 5 cloves garlic
- 2 chili peppers
- 1 tsp sesame oil
Instructions:
- Prepare the ingredients:
- Rinse the spare ribs thoroughly with water. Use a knife or a mallet to tenderize the meat, pounding on both sides to make it softer and better absorb the seasoning.
- Marinate the ribs:
- Coat the spare ribs with 1.5 tablespoons of Teriyaki sauce and a pinch of pepper, mix well with your hands. Add 1 tablespoon of sesame oil, mix thoroughly. Let the ribs marinate for about 30 minutes.
- Cook the ribs:
- Heat up a pan with hot oil, add the ribs and fry until the meat firms up.
- Add a cup of cold water, when the water evaporates, add a little cooking oil, continue frying until both sides of the meat turn light golden brown, then remove all the meat.
- Make Teriyaki sauce:
- Heat cooking oil in a pan, sauté the garlic, shallots, and chopped chili peppers until fragrant. Add 4 tablespoons of Teriyaki sauce, stir well.
- Then add all the previously fried meat, stir regularly to let the spare ribs absorb the sauce seasoning evenly. When the sauce is reduced, you can turn off the heat.


2. Pan-Fried Spare Ribs




Ingredients:
- 500g pork ribs
- 200ml fresh coconut water (about 1 coconut)
- 2 teaspoons minced garlic
- 2 teaspoons minced chili
- 2 teaspoons minced lemongrass
- 2 teaspoons fish sauce
- 1 lime
- 2 tablespoons cooking oil
- A pinch of common spices
- Prepare the pork ribs: To remove dirt and odor, rub the pork ribs with a little salt and the juice of 1 lime, then rinse with clean water and drain.
- To tenderize and marinate the meat, use a knife or meat tenderizer to gently pound the meat.
- Marinate the ribs: Place the ribs in a bowl and add 1 teaspoon of seasoning, 1 teaspoon of sugar, 2 teaspoons of fish sauce, 2 teaspoons of minced garlic, 2 teaspoons of minced chili, 2 teaspoons of minced lemongrass, 1/2 teaspoon of ground pepper.
- Mix well and marinate for about 15 - 20 minutes for the ribs to absorb the seasoning.
- Grill the ribs: Heat a pan, add 2 tablespoons of cooking oil and heat. Then, add the marinated ribs and fry both sides over medium heat until the ribs are firm and cooked through.
- Next, add 200ml of fresh coconut water to the pan, bring to a boil, then add 1 tablespoon of sugar, reduce the heat and continue to simmer for about 10 - 15 minutes until the liquid thickens and the meat absorbs the seasoning, achieving a beautiful brown color. Then, turn off the heat.
