You can whip up this dessert on the weekend with simple ingredients and it takes about an hour to make. It's perfect for a light afternoon snack, a dessert after dinner, or even for breakfast!
INGREDIENTS NEEDED FOR STEAMED RED BEAN MOCHI
- 50g unsalted butter
- 800g pumpkin, can be pureed, divided into 2 parts of 500g and 300g
- 70g granulated sugar
- 1/2 teaspoon cinnamon
- 350g sweet rice flour (mochi flour)
- 3 tablespoons cornstarch
- 100g rice flour
- 10-15 cloves

STEPS TO MAKE STEAMED PUMPKIN MOCHI
Step 1. Prepare the filling
Melt butter in a pan over medium heat. Add 500g of pumpkin puree, granulated sugar, and cinnamon powder.
Stir regularly and cook until the mixture darkens and thickens. This process will take about 30 minutes.
Allow to cool completely.


Step 2. Make the dough
While the filling cools, sift sweet rice flour, cornstarch, and granulated sugar into a mixing bowl. Add the remaining pumpkin puree and mix to form a smooth dough.
The dough should be elastic. If it cracks due to being too dry, add a few drops of water. If the dough is too wet, you can add more sweet rice flour.

Step 3. Shape the mochi
Divide the cooled dough and filling into 10-15 equal portions and shape them into balls.



Encase the filling with the dough and roll into a smooth ball.


Gently press the ball down to give it a shape resembling a flat pumpkin. Then use a toothpick to imprint the outer lines into the shape of your pumpkin.


Top it off with a clove as the stem of your pumpkin.

Step 4. Steam the mochi
Prepare a steamer with cold water and line the tray with cheesecloth. Place the mini pumpkins on the tray, spaced 5-6cm apart. Steam over boiling water for 10-12 minutes at high heat. The cooked pumpkins will appear slightly translucent.


Step 5. Presentation
Serve the mochi on a plate, whether hot or cold.
