• 1 cup finely chopped kimchi

• 6-8 dried anchovies, thinly sliced radish, small piece of dried seaweed, 3 shiitake mushrooms, 3 cups water

Steps to Make Spicy Korean Tofu Soup
Step 1. Prepare Rice Fish Broth
Add finely sliced dried anchovies, thinly sliced radish, dried seaweed, and shiitake mushrooms to a pot with 3 cups of water. Bring to a boil. Once boiling, reduce heat to medium-low and simmer for 25 minutes.
After 25 minutes, strain the broth. Set aside the mushrooms, thinly sliced.

Step 2. Cook the Soup
Heat a small regular pot or clay pot. Add oil, sauté onions and garlic until fragrant.

Turn the heat to high and add pork. Sauté for about 3-4 minutes.

Add kimchi, thinly sliced mushrooms, and mix well.

Pour in rice fish broth, then add 1 tablespoon salt, ½ tablespoon sugar, 2 tablespoons Korean chili powder, and 1 tablespoon sesame oil. Stir to combine.

Next, add the tofu. Bring to a boil.

Crack an egg on top and cook for 1 minute. Turn off the heat.

Step 3. Presentation
Top with green onions and serve with steamed rice and a side of kimchi.
