Limes: 5 pieces. Adjust the quantity based on your preference for sourness.
Pure honey: 1 tablespoon
Instructions
- Trim and clean the ribs to your preferred size. Season generously (opt for a lighter seasoning compared to regular ribs) and marinate for 2 hours.
- Heat a bit of cooking oil in a pan and sear the ribs over medium heat until they turn golden on both sides. Set aside on a plate.
- Cut and deseed the limes, then mix the juice with pure honey and 2 tablespoons of fish sauce for a sweet and savory blend. Pay attention to the saltiness to adjust during the initial marination to prevent overly salty ribs
- Pour out excess oil from the pan, add minced garlic and the ribs, stir-fry until well-coated, then pour in the sauce mixture until it thickens.
- This dish is a perfect match with hot rice, offering a delightful blend of sourness, sweetness, and a hint of saltiness. It's incredibly satisfying and adds an interesting twist to your usual meals. The tanginess is a unique touch, distinct from the typical tamarind-based ones.
