For Shrimp:
• 15 to 18 medium to large-sized shrimp
• 2 bell peppers, 1 red and 1 green
• 1 cup fresh Thai basil leaves
• 1 onion
• 1 to 2 tablespoons white wine, 1/4 cup coconut milk, 1 to 2 tablespoons vegetable oil
For the sauce:
• 6 to 8 lime leaves, 4 cloves garlic, a few stalks of scallions, 1 piece of ginger, 1 to 2 small fresh red chili peppers
• 2 tablespoons fish sauce, 2 tablespoons lime juice, 2 tablespoons cooking oil, 2 tablespoons soy sauce, 1 to 2 teaspoons brown sugar

Step 1. Prepare the shrimp
Peel and devein the shrimp, remove the heads, legs, and the black vein on the back. Score the back of the shrimp to make it curl nicely when cooked. Rinse the shrimp with salt water and drain.

Step 2. Prepare other ingredients
Rinse the bell peppers, cut into strips
Peel the onion, slice thinly

Slice the scallions and small chili peppers finely

Crush and finely chop the ginger and garlic.

Finely chop the Thai basil leaves

Clean the lime leaves, remove the stems
Step 3. Prepare the sauce
Place all the ingredients for the sauce into a food processor and blend until smooth. Set aside.
