INGREDIENTS FOR THAI PAD MI SALAD
- 800g rice noodles
- 20 to 25 fresh cleaned prawns
- 2 tablespoons vegetable oil
- 4 cloves garlic (finely chopped)
- 1 piece ginger (finely chopped) thumb-sized
- 1 red bell pepper (sliced thinly)
- A few stalks of celery (sliced thinly)
- 3 onions (sliced thinly)
- 2 to 3 cups bean sprouts
- 1 cup fresh coriander (chopped)
- 1/2 cup fresh basil (chopped)
- 1/3 cup crushed roasted peanuts
For the sauce:
- 1/2 cup boiling water
- 1 3/4 tablespoons tamarind paste
- 1/4 cup brown sugar
- 1/4 cup fish sauce
- 1 to 2 tablespoons chili paste

STEPS TO MAKE PAD THAI NOODLE SALAD
Step 1: Cook the noodles
Bring a pot of water to boil, add rice noodles and cook until tender according to the package instructions.

Remove the noodles, rinse with cold water to drain.

Step 2: Prepare the sauce
Combine the above ingredients. Stir until the sugar is dissolved.

Taste and adjust the sauce to your liking.
Step 3: Sauté the prawns
Pour 1/4 of the sauce over the prawns. Toss well and set aside to marinate quickly.

Heat the pan, sauté garlic and ginger for about 1-2 minutes until fragrant.

Add the prawns along with the marinated sauce. Stir-fry for 3 minutes or until the prawns turn pink and plump.

Step 3: Mix the salad
In a large bowl, place red bell pepper, celery, green onions, bean sprouts, cilantro, and basil, reserving some cilantro and basil for garnish later.

Add the sautéed shrimp and noodles.


Drizzle the sauce over and mix well.


Step 4. Presentation
Divide into bowls or plates, add cilantro and basil, along with finely chopped peanuts. You can also serve with chili sauce on the side.
