- Beef: 800 grams
- Young rice vinegar: ⅓ bowl
- Young coconut water: 1.5 liters (about 3 fruits)

- Pineapple: 1/2 fruit
- Onion: 1 bulb
- Rice paper rolls: 1 pack

- Fermented fish sauce
- Ginger
- Other seasonings: fish sauce, salt, broth powder, MSG
- Raw vegetables: pineapple, green banana, starfruit, lettuce, peppermint, perilla, carrot, cucumber, starfruit,...
- Tofu skin or fried tofu
Steps to follow
Step 1: Boiling beef bone broth
- After buying beef bones, rinse them thoroughly and chop them into small pieces. Then, pour water into a pot and add the beef bones, boil until the water boils, then pour off the water, and rinse the beef bones with clean water.
- Continue to add about 1 liter of water and bones to simmer for about 45 minutes. (Note to skim off the foam). Season the broth with fish sauce, salt, and broth powder to taste.

Step 2: Preparing ingredients
While waiting for the beef bone broth to simmer, you can start preparing the ingredients:
- When you buy beef, rinse it with water, pat dry the surface, and slice it thinly across the grain. Marinate the beef with a little finely chopped ginger, a little finely chopped garlic, ½ teaspoon ground black pepper, 1 teaspoon salt, 1 teaspoon MSG, and mix well. Marinate for about 30 minutes.

- Peeled pineapple, remove the eyes, and cut into small slices. Leave a portion of the pineapple, finely chop it to add to the fermented fish sauce.
- Lemongrass cut into 4 - 5 cm pieces, lightly crushed. Finely chop garlic, shallots, and chili.
- Peel the onion, cut it in half. Slice one half thinly. Cut the other half into wedges. The thinly sliced onion, you add to the plate of marinated beef with garlic, ginger, and mix well. The onion wedges are reserved for the hotpot broth.
- Clean and rinse the accompanying raw vegetables.

Step 3: Cooking beef dipping vinegar broth
- Place a pot on the stove, then add 2 tablespoons of cooking oil and heat until fragrant with lemongrass.
- Next, to enhance the aroma of the beef dipping vinegar dish, add minced garlic, minced shallots, and minced chili to the pot and sauté for about 2 minutes.
- Then, pour the beef bone broth into the pot on the stove, followed by adding the prepared coconut water, 100 ml vinegar. Add pineapple, sliced onions, tomatoes, and shredded coconut to the pot.
- Let the hotpot broth boil for about 5 minutes, taste and adjust the seasoning. Arrange the dishes and the hotpot for serving.

- Place the fermented fish sauce in a bowl, add finely chopped smashed garlic, finely chopped pineapple, finely chopped chili. Then add sugar and lime juice, stirring until it reaches the desired taste.
