Ingredients for making chicken vermicelli soup:

- Free-range chicken: ½ bird (or you can substitute with chicken thighs)
- Vermicelli noodles: 1 kg
- Ginger: 1 piece
- Dried shallots: 2 bulbs
- Scallions: 1 large bunch
- Cilantro: a small handful
- Lime leaves: 5 - 6 leaves
- Lime, chili, bean sprouts (according to preference)
- Seasonings: bouillon powder, salt, chili sauce, vinegar
How to make chicken noodle soup:
Step 1:
- Clean and wash the chicken with a diluted saltwater solution, then rinse with clean water.
- Place the chicken in a pot, pour water until it covers the chicken. Bring to a boil, then reduce the heat, skim off any foam on the surface, and simmer for about 20 minutes. Test with a skewer—if the liquid runs clear, turn off the heat, cover, and let the chicken cook thoroughly.
- About 10 minutes later, take the chicken out of the pot, let it cool slightly, then separate and shred the meat into small pieces or slice it into bite-sized pieces. Mix the chicken with a teaspoon of salt and finely chopped lime leaves.

Step 2:
- Roast purple onions and ginger over low heat until fragrant. Peel the onions and ginger, then add them to the pot of chicken broth from earlier. Put the chicken bones back into the pot, add enough water for 4 servings, and simmer for about 30 minutes.
- Clean the cilantro, cut off the roots, and add them to the pot, finely chopping the stems.

Step 3:
- Soak the vermicelli in warm water for about 10 minutes until it expands, then drain and cut into pieces about 7-10cm long. Set aside.
- Prepare scallions by removing roots and chopping finely.
- Clean lime, chili, and bean sprouts, then let them drain. Finely chop the chili and place it in a small bowl. Keep the lime whole, and cut it right before serving to avoid bitterness.
- After finishing the broth, leave it on without turning off the heat. Gently place the vermicelli in to blanch. Arrange the vermicelli in a bowl, top with shredded chicken, scallions, cilantro, and bean sprouts. Ladle the vigorously boiling broth into the bowl. Squeeze lime, add chopped chili, chili sauce, or vinegar according to taste, and enjoy while it's hot.

Important Note:
- When boiling the chicken, avoid cooking it completely before turning off the heat. At that point, the chicken is still too hot, and the meat will continue to cook, becoming tough and losing its deliciousness.
- You can enhance the dish by adding additional herbs like basil, cilantro, etc., if desired.
- When soaking in hot water, vermicelli tends to become mushy quickly. Therefore, chicken noodle soup should be eaten hot. If not consumed immediately, avoid blanching the vermicelli. When ready to eat, bring the broth to a boil again, blanch the vermicelli, and enjoy as usual.
