1 fish, approximately 500g – 700g
4 sprigs of green onions
4 bulbs of dried shallots

Black peppercorns
1 sizable bunch of coriander roots
1 substantial piece of ginger
2 sliced chili peppers
Fish sauce, sugar, and cooking oil, all in moderation
Cilantro
Seasonings: Seasoning granules, fish sauce, MSG, sugar, and cooking oil, all in moderation
Prepare the ingredients:
Clean and finely chop the green onions.
Peel and slice the dried shallots. Divide the dried shallots into two portions.
Take the white part of the green onions and half of the dried shallots, put them in a mortar, and grind into a paste.
Then, add this onion mixture to the bowl with fish. Add coconut caramel essence, black peppercorns, fish sauce, and sugar. Mix well. Marinate for 30-35 minutes.
Fresh ginger: Clean, peel, and thinly slice.
Coriander roots: Wash, peel, and thinly slice into rounds about 0.5cm thick.
Fish: Clean and rinse with salted water and finely chopped ginger to ensure clean, white, and firm fish meat. Then, cut the fish into slices about 2-3 cm thick and marinate with 1 teaspoon of seasoning granules, 1 teaspoon of fish sauce, ½ teaspoon of MSG, thinly sliced ginger, and 1 teaspoon of cooking oil for quick flavor absorption.
Whole chili peppers: Clean and leave the stems intact for better flavor during cooking.
Clean and chop cilantro into sections.
How to Make Delicious Braised Fish
Step 1: Mix fish sauce, sweet soy sauce, sugar, and water until the sugar dissolves completely.
Step 2: In a medium-sized clay pot (or regular pot if a clay pot is unavailable), heat 1 tablespoon of cooking oil, add garlic, shallots, and chili. Sauté for 2-3 minutes.
Add the sweet soy sauce mixture to the pan, bring to a boil, then reduce heat and simmer for 5 minutes.
Step 3: Add the fish, simmer on low heat for 10 minutes. Use food tongs to gently flip the fish and cook until the fish sauce reduces to about half or nearly dries up (around 10 minutes).

Reduce heat, sprinkle a pinch of black pepper on top. Transfer the braised fish to a plate or bowl, garnish with a little green onion, cilantro, and chili.
