- Ground pork shoulder: 100g;
- Pork liver: 100g;
- Pork fat approximately the size of your palm: 1 piece;
- Portion of fat: 1 piece (if desired);
- Bread: ½ piece;
- Unsweetened fresh milk: 150ml;
- Dried shallots, 2 cloves of garlic, peppercorns;
- Cooking oil, seasoning powder, spices, sugar, butter.
Steps to Make Pork Liver Pate
Step 1: - Cut the liver into small pieces. Then soak the liver pieces in 75ml of fresh milk for 20 minutes, then remove and rinse with clean water.
Step 2: Cut the pork fat into bite-sized pieces. Tear the bread into small crumbs. Pour the remaining 75ml of milk over the bread and soak.
Step 3: Heat cooking oil in a pan, wait until hot then sauté the shallots and garlic until fragrant. Next, add the pork and liver, season with 2/3 teaspoon of sugar, 2 teaspoons of seasoning powder, and 1 teaspoon of seasoning mix, stir well. Stir-fry until the liver is nearly cooked, then add the bread, quickly toss for about 1 minute, turn off the heat, sprinkle some fragrant pepper.

Step 4: Put the sautéed pork and liver into a blender and grind until smooth (if you prefer, you can leave it slightly coarse). For a rich taste, thinly slice the fat, line it at the bottom of a cup, then pour the ground pate on top, finally add a little butter and steam in a water bath for about 30-40 minutes. Once the pate is cooked, let it cool down and it will solidify. Simply invert the cup to remove the pate easily.

Ingredients for Chicken Liver Pate:
- Chicken liver: 500g;
- Pearl onions, finely chopped: 1 bulb;
- Shallots, finely chopped: 3 bulbs;
- Minced garlic: 3 teaspoons;
- Brandy: 1 tablespoon;
- Butter: 400g.
Steps to Make Chicken Liver Pate
Step 1: Clean the chicken liver, remove the fat, rinse with salted water and vinegar. Then soak in a little fresh milk for about 20-30 minutes. Then drain well.
Step 2: Heat a pan, when hot, add 200g of butter, when the butter is almost melted, add garlic, shallots, and pearl onions and sauté. Next, add the liver (even if it still has a little milk on it, it's fine), season with 1 teaspoon of seasoning powder, 1 teaspoon of pepper, 1/2 teaspoon of sugar, and ½ teaspoon of salt. Stir-fry until the chicken liver is cooked, then turn off the heat.
Step 3: Put the chicken liver into a blender and pulse a few times, then add 150g of butter and blend until smooth along with 1 tablespoon of brandy. Transfer the pate into jars or boxes. Melt the remaining 50g of butter and pour it over the top, then refrigerate the pate.
