Step 1: Prepare the ingredients for making ginseng soup
Clean the red apples with water to remove any dust. Use a toothpick to poke both ends of each apple before soaking them in warm water for 30 minutes. Once soaked, remove them.
Soak green beans and dried longans separately in bowls, pouring hot water over them, allowing about 5 cm above the ingredients. Let them soak for 5 – 6 hours. After sufficient time, drain the green beans, and for the dried longans, rinse them 2 – 3 times to retain their appealing crispiness when consumed.
Snow mushrooms, trim the stems, soak in clean water until they bloom, then rinse and cut into strands.
For the first batch of sago pearls, soak them in clean water. Then, place them in a pot of boiling water until they become soft. Transfer to a bowl of cold water and rinse them multiple times with clean water. This cooking method ensures the sago pearls don't stick together and maintain their delightful chewiness when consumed.
Lotus seeds into a pot with water, boil until they are partially cooked, then add 50g of sugar to cook until fully done. Soak shredded snow ear fungus in clean water until it blooms, then rinse and drain.
Peel and clean the lotus roots, slice them into thin layers, and boil. When the lotus roots are almost tender, add sugar to create a delightful crispiness and sweetness.
Step 2: Proceed with the Ginseng Soup Cooking
Bring 600ml of water to boil with 1000g of sugar. Then, pour the boiled water of lotus roots and lotus seeds into the pot to simmer together.
