Step 1: Pour soy milk into a pot and heat over medium heat.
Step 2: In another pot, bring 120ml water to a boil, add Aga Aga powder and stir well to dissolve. Then pour the warm soy milk and vanilla extract into the mixture, continue stirring. When the mixture boils, turn off the heat.
Step 3: Strain the mixture through a sieve into ceramic bowls, cover tightly, and let the tofu pho set for 2 hours.

- Dried soybeans: 150g;
- Apricot blossom honey: 300g;
- Water: 800ml;
- Sticky rice leaves: 1 bunch;
- Grape sugar: 1 spoon;
Steps to Make Tofu Pho Variation 2
Step 1: Soak the soybeans in water for about 4 to 6 hours, then peel them clean.
Step 2: If you have a soy milk maker, simply put the soaked and peeled soybeans into the blender with 800ml of water to yield 800ml of soy milk. Filter twice to remove pulp. If you don't have a machine, you can use a blender or grinder to grind the beans finely, then squeeze in a cloth bag to extract 800ml of soy milk.
Step 3: Bring the soy milk from step 2 to a gentle boil over low heat for about 10 minutes.
Step 4: Dissolve grape sugar in a little water to glaze the pot. Only do this when the soy milk is boiling, as grape sugar quickly turns sour.
Step 5: Cover the electric rice cooker lid loosely, avoiding water dripping onto the tofu's surface. Let it sit undisturbed for about 30 minutes, and we'll have a delicious tofu pudding.
Step 6: Dissolve sugar in water. Let the sugar water cool and store it in the refrigerator to chill. You can use pandan leaf water or grapefruit blossom water, jasmine water to infuse fragrance. If using grapefruit blossom or jasmine water, add them when the sugar water has cooled.
Step 7: Scoop out the tofu pudding; you can use a professional tofu skimmer or a ladle. Pour the chilled sugar water from the refrigerator over the tofu pudding to serve.

Ingredients for making tofu pudding 3:
- Soybeans: 200g;
- Rice flour: 50g;
- Gypsum powder: 5g;
- Water: 1.5 liters;
Sugar water section
- Palm sugar: 200g;
- Water: 150g;
- Ginger: 30g;
- A few pandan leaves.
Steps to make tofu pudding 3
Step 1: Making tofu pudding: Cleanse the soybeans and soak them in 1.5 liters of water for 3-4 hours.
Step 2: Put them in a blender, blend finely with water. Pour the blended soybean water into a cloth bag, squeeze tightly to extract all soybean milk leaving only residue in the cloth bag.
Step 3: Add a few pandan leaves into the pot of soybean water, boil it thoroughly. Stir constantly while boiling. That's how you get soy milk.
Step 4: Mix rice flour with some water until dissolved, strain for smoothness. Slowly pour a bowl of boiling soy milk into the rice flour water, stirring constantly to avoid lumps.
Step 5: Pour the rice flour water back into the soy milk pot and continue boiling. Note that when cooking soy milk, remember to stir continuously to prevent scorching.
Step 6: Prepare the tofu pudding pot: Put gypsum powder into the pot, add a little water, stir to dissolve, and spread thinly around the pot. When the milk boils, pour it into the prepared pot. Then cover the pot with a dry cloth. After 2 hours of tightly covering, it's ready to eat.
Step 7: Making sugar syrup: Peel and wash the ginger, then slice thinly.
Put sugar and water in a pot with pandan leaves, boil until the sugar dissolves and boils, then add the ginger. Continue to simmer until the sugar thickens slightly.
