1. How to make shrimp seasoning powder

Ingredients:
- 0.6 kg fresh shrimp (yielding 100g shrimp powder)
- Sea salt (according to your preference for saltiness)
Note: Opt for fresh, preferably with roe, shrimp for enhanced flavor.
Creating savory shrimp seasoning:
- Wash the shrimp thoroughly and add a pinch of sea salt for richness (use 6 ounces for 2-3 small teaspoons of fine salt; adjust salt according to taste preferences or omit if unnecessary). Toss the shrimp in salt, ensuring it absorbs the flavor, and let it sit for a few minutes.
- Place the shrimp in a non-stick pan and sauté until they become dry, turning consistently until the shrimp is dehydrated. If you lack a microwave or oven, set the flame to the lowest setting and turn until the shrimp is thoroughly dry and delightfully crispy.
- If you possess a microwave, evenly spread the dehydrated shrimp on a glass plate inside. Activate the microwave on the lowest or slightly higher setting, rotate after 5 minutes, and continue rotating until the shrimp achieves a dry and crispy texture.
For a delightful twist, when using the oven, bake two sticks at 100 degrees Celsius (this will take approximately 1-2 hours) until the shrimp turns crispy and golden.
Once the shrimp is dry and crispy, grind it into a fine powder using a dry grinder. Sieve the powder for a smooth texture. Voila! You now have a fragrant and delicious shrimp powder. Store it in a tightly sealed glass jar and use as needed.

Note: Towards the end, there may be some salt residue and shrimp shells that are challenging to grind completely. Remove them onto a clean surface and use a rolling pin to finely flatten the mixture. This part can still be used for seasoning; just avoid giving it to young children for baby food. I usually mix this part directly into the powder.
2. Making chicken seasoning powder

Ingredients for the marinade:
- 1 piece of chicken breast: 250g
- Salt: 80g
- Fish sauce: 2 tablespoons
- White pepper powder: 1 tablespoon (using this type will make the seasoning powder look more appealing)
- Onion powder: 1 tablespoon (available at your local grocery store)
- Garlic powder: 1 tablespoon
- Sugar: 1 tablespoon (approximately 20g)
Note: You can purchase garlic and onion powder at supermarkets or make them at home by sautéing fresh garlic and onion and grinding them finely.
How to make chicken seasoning powder:
- Clean the chicken breast, cut it into small pieces, marinate it with fish sauce, and steam until the meat is cooked. After the meat is cooked, let it cool and then grind it finely in a blender.
- Place the ground chicken on a tray lined with parchment paper. Preheat the oven to 130°C and bake the ground chicken. If you don't have an oven, you can use a non-stick pan on the lowest heat to dry it out.
- Put the dried chicken in the machine along with salt, onion powder, garlic powder, pepper, and sugar. Grind it again for a smooth texture.
- Grind the chicken seasoning powder until it is extremely fine, then dry it once more to achieve a powdery consistency.
- Store the chicken seasoning powder in a clean glass jar and seal it tightly.

3. How to make pork seasoning powder
Ingredients:
- 0.6 kg lean beef
- 0.1 kg rock salt (adjust to taste)
- 5 bulbs of garlic
- 5 bulbs of shallots
- 5 stalks of scallions
- 1 piece of ginger
- Seasonings: Rock sugar, fish sauce, black pepper
How to make pork seasoning powder:
- Clean the meat, pat it dry, slice it thinly (for easy drying), and put it into a pot.
- Scrape the skin off the ginger and slice it; peel and finely chop the shallots and garlic; wash the scallions.
Then, add everything to the pot with the meat.

- Add half of the prepared salt + 1 tablespoon of fish sauce + 1/2 tablespoon of sugar + 2 teaspoons of black pepper. Put everything into the pot with the meat and mix well, marinate for 20-30 minutes.
- After marinating, place the pot on the stove, turn on medium heat to dry the meat until it's cooked and all the liquid evaporates. Turn off the heat and let the pot cool.
- Once the meat is cool, put it into a grinder and grind it finely.
- Then spread it evenly on a microwave-safe plate, set the microwave to the lowest setting, rotate for 10 minutes, take it out, flip it, put it back in, rotate like this for another 10 minutes, then take it out. (For an oven, follow a similar process). Add the remaining salt and mix well. Repeat the rotating step every 10 minutes until the meat is dry and crispy. If you don't have a microwave or oven, you can use a non-stick pan, keep the heat low, and flip the salted meat mixture until dry and crispy. Then grind it into a fine powder.
- When the meat and dry salt are crispy, grind them into a fine powder using a grinder, then pass through a sieve to filter.
