Method for making stir-fried eggplant with minced beef:
Step 1: Prepare the ingredients
Wash the eggplant thoroughly, remove the stems, and cut them into medium-sized pieces. Prepare a bowl of diluted saltwater, soak the eggplant in it while cutting to prevent discoloration, then drain the water. Soaking the eggplant in saltwater will prevent it from turning bitter and dark during stir-frying.
Marinate the minced beef with chopped garlic, seasoning powder, pepper, and sugar, mix well to allow the ingredients to penetrate the meat, marinate for at least 10 minutes.
