How to Cook Crab Noodle Soup:
Step 1: Making the Noodle:
Prepare 1 bowl of rice flour, 1 bowl of tapioca flour, a pinch of salt, and 1 bowl of hot water.

Mix the flour thoroughly with salt, add water, knead until the dough is smooth and no longer sticky. Roll it thinly and cut into strands.

Boil water, gently drop the noodle strands in and cook until they float, then remove and soak in cold water.
Step 2: Processing Ingredients

Clean the crab, steam until cooked, remove the meat and claws separately (you can buy crab meat ready at the supermarket)
Peel and finely chop dried shallots, sauté until fragrant. Then add crab meat and stir-fry with a bit of fish sauce and pepper for aroma. Set aside the sautéed crab paste.

Clean straw mushrooms, soak in salt water, vertically slice, and stir-fry in a pan.

Boil pork leg meat until cooked, then cut into chunks.
Clean cilantro, and finely chop.
Boil and peel quail eggs.
Step 3: Prepare the broth:
Blanch the pork bones, clean them, and simmer in cold water to make the broth (simmer from the beginning of the cooking process).

Infuse the desired color, add to the broth after seasoning to taste, then add straw mushrooms. Dissolve a small amount of tapioca flour in water and add to the pot to create thickness.
Step 4: Presentation
Place the rice cake in a bowl, add pork leg meat, crab meat, crab chunks, and quail eggs on top.

Pour the broth, sprinkle with shallots, coriander, and pepper on top, and serve hot.
