- 70 - 80g dried shiitake mushrooms
- 300g sweet chard
- 2 cloves minced garlic
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1 tablespoon Thiệu Hưng rice wine
- 1/4 teaspoon black soy sauce
- 1 1/2 tablespoons regular soy sauce
- 1 tablespoon vegetarian oyster sauce
- 1 1/2 teaspoons sugar
- 1/8 teaspoon sesame oil
- 1/8 teaspoon white pepper
- 1 tablespoon cornstarch (dissolved in 1 tablespoon water)

Steps to Make Mushroom and Chard Stir-Fry
Step 1. Prepare the shiitake mushrooms
Clean the dried shiitake mushrooms. Soak them in a bowl with 3 cups of hot water. Place a plate on top to ensure the mushrooms are completely submerged.
Soak for 15 minutes, remove the mushroom stems, then soak the mushrooms for an additional 15 minutes. Gently squeeze out excess water and set aside.
Step 2. Blanch the chard
While the mushrooms are soaking, prepare the chard by cleaning it thoroughly.
Bring 6 cups of water, 1 tablespoon of vegetable oil, and 1 tablespoon of salt to a boil. Blanch the chard for 40 seconds, stirring occasionally. The chard should be tender but still vibrant green.

Place the chard in a bowl and pour 2 cups of water over it. The water will help halt the cooking process, blanching the chard quickly once submerged in cool water. Remove the chard to drain excess water.
Next, arrange the chard in a circle around a large serving plate, leaving a gap in the center for the mushrooms.

Step 3. Mushroom sauce
Heat oil in a pan, add minced garlic and mushrooms, and stir-fry for 10 seconds.

Add Thiệu Hưng rice wine and stir well. Carefully pour the soaked mushroom water into the pan, ensuring no sediment from the bowl gets into the pan.
When the water boils, add black soy sauce, regular soy sauce, vegetarian oyster sauce, sugar, sesame oil, and white pepper. Stir until the mixture thickens and simmer for 5 minutes over low heat.

Next, mix the cornstarch mixture and slowly pour it into the sauce, stirring continuously. Allow the mushrooms to cook for an additional minute, then taste and adjust the seasoning of the sauce. The sauce should be thick enough to coat the mushrooms.

Step 4. Presentation
Place the mushrooms and sauce in the center of the prepared chard plate. Enjoy!
