The live freshwater eel is put into a clay jar, salt is rubbed into it multiple times to remove the slime, then washed clean with well water, the eel's internal organs are removed, then the eel is chopped into small pieces by hand and marinated with thinly sliced lemongrass, peanuts, a bit of pepper, onions, chili, then stewed in a clay pot with banana leaves inside and the pot lid on top. Ladle the hot congee into a bowl, then add the golden brown eel, served with freshly sliced water spinach. To accompany this congee dish, there are plates of cilantro, spring onions, and crispy rice paper.
