Ingredients:
– Chicken thighs: 500-600g
– 1 coconut
– Garlic and purple onions
– Salt, bouillon powder, soy sauce, honey, cooking oil, pepper.
Instructions:
– Peel and wash the onions and garlic, then finely chop them.
– Use a knife to lightly score a few lines around the chicken thighs for better seasoning absorption. Marinate the chicken thighs with the chopped onions, garlic, a pinch of bouillon powder, pepper, and soy sauce for at least 30 minutes. Optionally, refrigerate for 2-3 hours for deeper flavor infusion.
– Heat a pan with cooking oil. Choose a deep pan to avoid switching pans when adding coconut milk later. Once the oil is hot, fry the chicken thighs until golden brown on both sides. Ensure to remove excess chopped onions and garlic from the chicken thighs before frying to prevent burning.
After evenly browning both sides of the golden chicken thighs, remove excess oil from the pan. Then add coconut water, 1 tablespoon of honey, a pinch of seasoning powder, simmer over low heat until the liquid is almost evaporated, season to taste.
