Pandan chicken rolls, a renowned Thai delicacy made from chicken, are a staple in family meals. Let's learn how to make these delectable rolls with PasGo.
Pandan chicken, also known as pandan leaf-wrapped chicken, is a popular dish among the people of Thailand, alongside tom yum, pad thai, and Thai hot pot. Tender, flavorful chicken infused with the sweet, aromatic essence of pandan leaves creates a uniquely delightful taste. Using dried and powdered chicken breast and thigh adds an unexpectedly tender and sweet touch to this dish.

Ingredients:
- 500 grams of boneless chicken meat
- 2 teaspoons of toasted sesame seeds
- 2 teaspoons of minced garlic
- ½ teaspoon of ground black pepper
- 1 teaspoon of sugar
- 1 tablespoon of fish sauce
- Oyster sauce, soy sauce
- Pandan leaves (screwpine leaves)
How to Make Pandan Chicken Rolls:
Step 1:
- Prepare boneless chicken meat with skin intact, cut into square pieces. Toast sesame seeds until golden and fragrant.
A2
- Peel and mince garlic, mix with 1/2 teaspoon of black pepper and 1 teaspoon of toasted sesame seeds.
- Marinate all ingredients with the chicken meat. (Leave 1 teaspoon of toasted sesame seeds for the dipping sauce later)
- Add 1 tablespoon of fish sauce, 1 teaspoon of sugar, and 1 tablespoon of oyster sauce. Mix well and let the chicken marinate for at least 1 hour for the flavors to infuse.
Step 2:
- Take a pandan leaf, turn it over so the shiny side faces down. Fold the two ends upwards diagonally, leaving one end longer than the other.
- Then, pull the longer end downwards and tuck it inside.
- Flip it over, tuck the longer end inside again, and pull tightly.
- Now the leaf has formed a small empty pouch inside.
- Use a fork or chopstick to stuff the chicken into the pandan leaf. Stuff all pieces one by one.
A3
If you want a quicker and simpler method, just wrap the pandan leaf around the chicken and secure with a skewer.
Step 3:
- Heat oil in a pan over medium heat, then fry the pandan chicken rolls. Fry for about 3 - 5 minutes until the chicken is golden brown and cooked through.
A4
- Transfer the chicken to a plate and serve with soy sauce sprinkled with some toasted sesame seeds.
A5
Pandan leaves impart a delightful fragrance and keep the chicken moist, ensuring it absorbs the seasoning evenly. Paired with a rich soy dipping sauce, it's a perfect combination. This dish can be enjoyed hot with steamed rice or as a tasty appetizer.
Wishing you all success!
