Typically, there are two types of rice for brewing: brown rice and glutinous rice. Depending on your preferences, you can choose between these two types of rice. Another important note is to select rice grains that have had the husk removed but still retain the bran. This husk layer not only enhances the aroma of the wine but also contributes to its health benefits.
– Yeast
When it comes to yeast, you can choose based on your preferences, such as yeast for fermentation, leaf yeast, or herbal yeast. However, it's crucial to purchase yeast from reputable sources to ensure it's free from mold, dampness, or impurities.
Transforming rice wine using a meticulous process at home
Step 1: Brewing Rice Wine
To start, rinse the rice to remove any dirt particles. Then, soak it in clean water for about 30 minutes to ensure even expansion during cooking.
Next, transfer the rice to a large pot for cooking. If you're familiar with cooking rice daily, making rice wine follows a similar, straightforward process. Simply combine water and rice in a 1:1 ratio. Place the pot on the stove and cook until done.
Once the rice wine is cooked, pour it into a large fermentation vessel. Wait for the rice to cool before proceeding to the next step.
Step 2: Fermenting the Yeast

This step is quite straightforward; all you need to do is remove the bran layer from the yeast. Crush or grind it, then mix the yeast thoroughly, ensuring an even distribution in the rice.
Step 3: Yeast Fermentation
The yeast fermentation process typically involves two stages: dry fermentation and wet fermentation.
+ Stage 1: Dry Fermentation.
During this stage, mix the yeast-infused glutinous rice in a large jar or container. As the rice is undergoing fermentation in an anaerobic environment, seal the container tightly. After 4-5 days, the rice in the container will naturally release water, and at this point, the wine will have a delightful aroma.

Note that the suitable temperature for fermentation in this stage is 20-25 degrees Celsius, so pay attention to proper storage conditions.
+ Stage 2: Wet Fermentation.
After dry fermentation, add water to the fermented glutinous rice. The ideal water-to-rice ratio is 10kg of rice to 15 liters of water. Seal the container tightly.
After fermenting for 1-2 weeks, taste the fermented rice. If it has a spicy flavor and the liquid has turned translucent, it's ready for distillation.
Step 4: Distilling the Wine

This is the final step to produce a complete batch of wine. Pour all the liquid and rice mixture into a pot. Note that you need to adjust the temperature to prevent boiling over or burning, as this can give the wine a harsh smell and make it difficult to drink.
+ First Distillation: In the initial distillation, we obtain a rather potent type of wine, also known as the 'first run.' This type is not suitable for consumption, as it can lead to alcohol poisoning due to its high alcohol content, approximately 55-65 degrees, posing a direct health risk.
+ Second Distillation: Moving on, we distill a medium-bodied wine. Typically, this wine is the most enjoyable, with an alcohol content ranging from 35-45 degrees, suitable for immediate consumption or storage.
+ Third Distillation: In this round, we obtain a wine with lower alcohol content. However, it may have a slightly sour taste and is no longer as palatable. This type of wine is often blended with the base wine obtained from the second distillation.
