2. Steps to make delicious and authentic sautéed frog
Step 1: Prepare additional ingredients for the dish
- Soak wood ear mushrooms in hot water for 10 – 15 minutes, remove, discard stems, rinse thoroughly, then cut into bite-sized pieces.
- Peel and wash onions, then cut into wedges.
- Clean and peel lemongrass and purple onions, then crush, mince finely, and set aside separately. Remove stems from horn chilies, wash thoroughly, and slice.
- Wash coriander thoroughly and cut into 3 – 4cm long sections.

- Skin and gut the frogs, removing the backbone (as it contains numbing agents harmful to the body when consumed, as well as black tendons and blood vessels, as frogs often live in rice fields, marshes, and may be infected with worms, larvae)
- Chop the frogs into bite-sized pieces and wash them with wine, ginger or vinegar, diluted saltwater to remove any fishy smell and bacteria.
- Marinate the frogs with 1 tablespoon minced purple onion, 1 tablespoon sugar, 1 tablespoon seasoning powder, 2 tablespoons salt, ½ tablespoon ground pepper, and 1 tablespoon turmeric powder for a beautiful golden color when cooking. (Use a teaspoon). Marinate for 30 – 45 minutes for the frogs to absorb the flavors.
