Ingredients
– 500g fresh barramundi fish
– 2 fresh chili peppers
– 1 small branch of fresh ginger, 1 lemon, spring onions
– Other seasonings: fish sauce, pepper, salt, minced garlic, sugar
Method:
Step 1: Prepare the ingredients
– Rinse the fresh snakehead fish thoroughly, gut the fish, remove all the innards, cut off the tail, remove the gut and fins of the fish. Then, wash the fish, you can leave it whole or cut it into 2 pieces, and let it drain. Once the fish is drained, sprinkle about 3 tablespoons of salt evenly on the fish body, and rub it evenly.

– Then, marinate the snakehead fish with 1/2 teaspoon of pepper, 1/2 teaspoon of salt, 1/2 teaspoon of minced garlic, 1 tablespoon of sugar, and 2 fresh chilies sliced into pieces, for about 15 minutes to absorb the seasonings.

Peel and wash garlic, shallots, and ginger thoroughly. Chop them finely and set aside in separate bowls. Clean and slice chili peppers lengthwise.
Step 2: Cooking Process
Place a steamer on the stove. While waiting for the water to boil, arrange the mackerel fish along with the ingredients, adding some ginger strips, a few chili peppers, and scallions on top. When the water boils, place the mackerel dish into the steamer and steam for about 15 minutes. Once the mackerel is steamed thoroughly, remove it from the steamer.

Step 3: Prepare the Mackerel Fish Dipping Sauce
Steamed mackerel fish is incomplete without a fragrant and flavorful fish sauce. Add 1/2 tablespoon of distilled water, 1 tablespoon of fish sauce, 2 teaspoons of sugar, 1 tablespoon of minced garlic and ginger, and 2 tablespoons of lime juice to a bowl and stir well.
