Processing the Dish: Southern Western Pomelo Sweet Soup
Step 1: Soak peeled mung beans in water for about 2 hours or overnight. Then, cook the mung beans until they are tender.

Clean the fresh pomelo peels, remove the outer green layer, and cut them into pomegranate-like seeds. Mix the pomelo peels with salt and 1 cup of water, gently squeeze by hand to avoid bitterness, and soak the pomelo peels for about 3 hours or overnight.

Step 3:
Bring a pot of water to boil with 1 tablespoon of vinegar, add the pomelo peels, blanch briefly. Rinse the pomelo peels with water about 2-3 times, put them in a bowl, mix with 50g of white sugar in the bowl.

Step 4
Coat the pomelo peels with tapioca flour in a bowl, mix well. Then, put the pomelo peels in a pot of water, boil for about 5 minutes. Remove the pomelo peels, transfer them to a filtered water bowl.

Step 5
Bring a pot of water to boil, add pandan leaves, the remaining 50g of white sugar, 100ml of coconut milk, peeled mung beans, and pomelo peels. Stir well, simmer over low heat for about 5-10 minutes.

Turn off the heat, ladle the pomelo sweet soup into a bowl, pour the remaining coconut milk over the sweet soup.
