- Beef: 500g (preferably with both lean meat and fat to avoid dryness)
- Pineapple: ½ fruit
- Green banana: 1 fruit
- Lime: 1 fruit
- Lemongrass: 2 stalks
- Galangal: 1 bulb
- Water spinach: 1 bunch
- Horn pepper: 1 fruit
- Sugar: 1 teaspoon
- Salt
- Ground dổi seeds: 1 teaspoon
- Toasted sesame seeds: 2 teaspoons
How to make lime-infused beef tenderloin:

- Clean the beef thoroughly and place it in a pot with enough water. Add all the cleaned and crushed lemongrass leaves, and a teaspoon of salt. Boil until the beef is cooked through.

- Once the beef is cooked, remove it from the pot and let it cool completely.

- Peel and thinly slice the green bananas, soak them in a bowl of diluted saltwater to remove the sap and prevent browning

- Peel the pineapple, remove the eyes, and thinly slice it separately
- Wash the chili peppers thoroughly and thinly slice them

- Prepare the young lemongrass and galangal by cleaning them and thinly slicing the lemongrass diagonally and finely shredding the galangal

- Pick and wash the water spinach, drain well, and cut into short sections

- Let the beef cool, then slice it into large, thin pieces

- Place the sliced beef in a bowl, add the shredded galangal, thinly sliced lemongrass, 1 teaspoon of salt, and 1 teaspoon of sugar, mix well to marinate the beef

- Cut two limes in half and squeeze out the juice to mix thoroughly with the beef. Mix well to ensure the beef absorbs the lime juice, creating a light sour taste when eaten.

- Finally, add 1 teaspoon of ground dổi seeds, 2 teaspoons of toasted sesame seeds, and water spinach, mix well

- Arrange alternating slices of green banana and pineapple around the edge of the plate. Place the lime-infused beef tenderloin on top of the pineapple and banana. If you enjoy spiciness, you can also mix some chili into the beef for enhanced flavor.
