Ingredients for making Khọt cakes:
(serving 6 people)
- 1kg Khọt cake flour (you can purchase this flour at supermarkets or grocery stores. If you prefer a golden hue for your cakes, you can add 1/2 teaspoon of turmeric powder)
- 400g finely minced lean meat (or you can request pre-ground meat)
- 300g fresh shrimp
- 3 eggs
- 500ml coconut milk
- 300g peeled mung beans
- 10 stalks of green onions
- 3 bulbs of purple onions
- 1 bulb of shallot
- Seasonings: pepper, salt, MSG, fish sauce,...
- Limes, chili peppers, assorted fresh herbs
- Tools for making Khọt cakes: Khọt cake mold, clean bowl, spoon, ladle
How to make Khọt cakes:
Step 1: Prepare the ingredients:
- Clean and peel the fresh shrimp, then cut into rounds or pearls.
- Steam the mung beans until tender.
- Peel and clean the shallot, then cut into pearls.
- Peel and clean the purple onion, then thinly slice.
- Trim the roots off the green onions, wash thoroughly, and cut into segments, each segment about 0.5 cm long.
Step 2:
- Mix Khọt cake flour, eggs, and 400ml coconut milk into warm water (remember, the water should be around 70 degrees Celsius, not boiling, to prevent clumping). Stir well with a pinch of salt until the flour is fully dissolved, then let the batter rest for 15 minutes.

Note:
When mixing cake batter with warm water, it's important to add just enough water, pouring slowly bit by bit until the dough is kneadable, not too runny or too thick. Adding too much water to the flour will make the cake easily crumble during frying and not crispy when taken out of the tray. Conversely, adding more flour than the specified amount of water will result in a less tasty cake because it lacks elasticity.
Step 3:
Heat a pan on the stove, heat up cooking oil, sauté purple onions until fragrant, then add minced pork, fresh shrimp, steamed mung beans until cooked through, briefly stir-fry onions. Season with 2 teaspoons of salt, 2 teaspoons of fish sauce, 1 teaspoon of MSG, 1 teaspoon of pepper (seasonings can be adjusted to taste) then add the remaining 100ml of coconut milk, mix well and you have an incredibly enticing cake filling.

Step 4:
- Baking stage: Place the cake mold on the stove, pour oil to coat the mold. When the mold is hot, pour the cake batter into the mold, add a little filling mixture in the middle of the cake, cover the lid.
- When the cake turns golden, the filling becomes reddish-brown, and the green color of the scallions in the oil indicates the cake is cooked, quickly remove the cake from the mold.

Once the cakes are done, you can place them on a plate and decorate them as you wish. Banh Khot should be eaten hot, that's when you can fully appreciate the fragrant taste of rice flour, the creamy flavor of coconut milk, and the rich taste of shrimp.
