If Hanoi is renowned for its signature fried spring rolls, land crab patties are a favorite among Central Vietnamese. Join us at Vào bếp với Mytour to learn how to make this flavorful dish:
1. Ingredients preparation
- Ground pork: 300 grams Carrots: 100 grams Taro: 100 grams Wood ear mushrooms: 50 grams (also known as cloud ear mushrooms in the North) Glass noodles: 50 grams Scallions: 20 grams Eggs: 1 Chicken eggs Fresh land crabs: 300 grams Seasonings: Bouillon cubes, MSG, black pepper Ramie leaves Ramie shells Cooking oil

2. Necessary tools
Stove, pan, plate, large bowl, knife, cutting board, etc.

Step 1: Cleaning the prawns
- Clean the prawns by removing the whiskers, discarding the heads, and rinsing thoroughly. If you prefer prawns without shells, peel them, leaving a small notch at the tail, and remove the back vein.
Step 2: Preparing the ingredients

- Peel and julienne the carrots and taro for easier rolling. Soak the wood ear mushrooms and glass noodles until soft, then drain. Chop the scallions finely.
Step 3: Mixing the ramie filling

- Combine all the prepared ingredients in a bowl and mix well to create the filling for the ramie rolls.
Mix the ingredients: shredded carrots, taro, ground meat, dry vermicelli, scallions, wood ear mushrooms, and chicken eggs in a large bowl. Add seasonings: 2 teaspoons of bouillon cubes, 1 teaspoon of MSG, 1 teaspoon of ground pepper. Then, thoroughly mix all the ingredients together.

- Step 4: Rolling the ramie rolls
Place a ramie leaf on a cutting board, dampen it with water to soften. Then, place a portion of the filling in the center and roll according to instructions. After rolling lightly, add a shrimp and continue rolling until the ramie leaf is used up.

- Step 5: Frying the rolled ramie rolls until golden brown
Heat cooking oil in a pan over medium heat, then reduce to medium heat. Add the rolled ramie rolls and fry until golden brown and cooked through.

If you have an air fryer, you can brush a layer of cooking oil on the ramie rolls. Then, preheat to about 155°C and bake for 15 minutes. Next, flip the ramie rolls and bake for another 5 minutes at 200°C until they are golden brown and cooked through.

Finished Product
When cooked, the land crab patties will turn golden brown. Enjoy the crispy, fragrant goodness of the meat and shrimp. You can dip these land crab patties in chili sauce or sweet and sour fish sauce for extra flavor.
