Whether you have an unripe mango on hand or simply adore green mangoes, now is the perfect time to whip up some seafood mango salad to add zest to your daily meals.

Essential Ingredients
(Serves 4)
- 1 large or 2 small mangoes (about 400g). Let me share a tip on choosing the perfect mango for this salad: the best varieties are honey mangoes or young mangoes; however, depending on your family and friends' preferences, you can opt for mangoes with lower acidity. Higher acidity mangoes work well with fish sauce dressing.
- Approximately 10 fresh shrimp
- 1 chili pepper
- 1 clove of garlic
- Seasonings: fish sauce, sugar, black pepper
- Peeled roasted peanuts (200g)
- Fresh herbs (cilantro, basil, mint)
How to Make Seafood Mango Salad
Step 1
Peel the green mango and julienne it into thin strips resembling bean sprouts.

Step 2
Clean the shrimp with salt, boil or steam until cooked through. Remember to cook the shrimp just until tender to maintain their sweetness and freshness. After cooking, peel the shrimp, devein, and split them in half lengthwise for a visually appealing and enjoyable dish.

Step 3
Prepare the fish sauce dressing with the following proportions: 1 tablespoon sugar, ¼ tablespoon vinegar, 2 ½ tablespoons water, 1 tablespoon good fish sauce, 5 cloves garlic minced, 1 chili pepper minced. If the mango is sour, you can add sugar to the fish sauce; if it's sweet, you can add a little vinegar.

Step 4
Clean and finely chop the fresh herbs, leaving a few sprigs of cilantro for garnish. After roasting, half of the peanuts can be crushed, while the other half can be left whole for mixing and garnishing the dish.

Step 5
Add mango first, then shrimp, mix well with fish sauce. You should add the fish sauce gradually to control the amount. Avoid adding too much as the mango will become soggy later on.
Then add crushed peanuts and some whole peanuts, mix and add the fresh herbs last. Try not to squeeze and mix the herbs too much as they will become mushy.
Step 6
Now is the time to unleash your creativity and make the dish even more enticing. Essentially, you just need to arrange it on a plate, garnish with a few sprigs of cilantro on top, and sprinkle some roasted peanuts. The dish is already captivating thanks to its inherent colors.
