- Coconut cream: 120ml;
- Agar agar powder: 10g;
- Mooncake mold.
1.2 Steps to Make Butter Jelly Mooncakes
Creating jelly mooncakes with butter is incredibly simple and much easier compared to baked mooncake recipes or traditional sticky rice mooncakes.
Step 1: Firstly, take a clean pot and add 200ml of fresh milk, 3g of agar agar powder, and 30g of sugar. Stir until the agar agar powder dissolves. Then, add a bit of coconut cream and bring it to a boil. Pour the mixture into molds (using small bowls), let it cool completely until the jelly sets firm.

Step 2: Once the jelly in the bowls has set, pour into small molds for the filling.
Step 3: Next, peel the butter and put the flesh into a blender. Blend with 200ml of unsweetened fresh milk and the remaining sugar until smooth. Pour 100ml into a pot and add 7g of agar agar powder. Bring to a boil. Finally, pour the blended butter mixture into the pot of jelly, stir well, then turn off the heat.

Step 4: Pour the butter jelly into 1/3 of the mold, when the jelly sets slightly, add the coconut filling in the center, then continue pouring the butter jelly to fill the mold. Let the jelly cool slightly, then place it in the fridge for about 2 hours until it sets firm and cold.

2. How to Make Jelly Mooncakes with Mung Bean Filling
2.1 Ingredients for Making Jelly Mooncakes with Mung Bean Filling
- Agar agar powder: 45g;
- Red dragon fruit: ½ fruit (200g);
- Peeled green beans: 100g;
- Coconut milk: 100ml;
- Sugar: 100g;
- Water: 2 liters;
- Mooncake mold.
2.1 Steps to Make Jelly Mooncakes with Mung Bean Filling
Unlike the traditional method of making mung bean-filled mooncakes, making jelly mooncakes with mung bean filling is very straightforward.
Step 1: Soak the beans until they swell, then cook until soft. Blend smoothly with 0.5 liters of water and 50g of coconut milk powder. Pour the blended beans into a hot pan, stir until slightly dry.

Step 2: Peel the red dragon fruit, put it in a blender and blend thoroughly with 0.5 liters of water.
Step 3: Blend the beans smoothly and then pour into jelly molds (only fill 1/3 of the mold to make the filling layer in the middle). After removing the green beans from the mold, use a knife to trim around each side about 1cm to prevent sticking when adding the filling.
Step 4: Pour water into a pot, then add agar agar powder and stir until dissolved. Add sugar and let it sit for about 10 minutes for the agar agar to bloom. Put all the blended red dragon fruit into the jelly pot and bring to a boil, then add 50g of coconut milk powder and stir well before turning off the heat.

Steps to Make Mooncakes
Step 5: Place the mold on a wide tray, scoop the dragon fruit jelly into about 1/3 of the mold, let it slightly set. Keep the remaining jelly warm on the stove.
Step 6: When the jelly starts to set, gently add the mung bean filling into the mold. Scoop the red dragon fruit jelly to fill the mold completely, let it cool, then store in the refrigerator for about 2 hours until the jelly sets completely.
Step 7: After 2 hours of firm setting, gently remove the mold and cut into small pieces, they look very appealing.
