Ingredients:
- Glutinous rice flour: 400g
- Peeled mung beans: 200g
- Mai flower sugar: 300g
- Purple onion
- Ginger: 1 piece
- Cooking oil, salt, sugar
- Toasted sesame seeds: 20g
If possible, consider using palm sugar instead of Mai flower sugar, as palm sugar is cooler and healthier.
How to make ginger-infused glutinous rice balls:
Step 1: Ginger tea preparation
- Peel and wash the ginger, then chop and crush it.
- Chop palm sugar or Mai flower sugar into small pieces for quicker melting.
- Place the pot on the stove, add 500ml of filtered water along with ginger and sugar. Turn on the heat to medium, stir well until the sugar dissolves completely, and add ½ teaspoon of salt. Then turn up the heat and simmer until it boils.
- Reduce the heat when the sugar water boils and let it simmer for about 10 - 15 minutes to allow the ginger to release its fragrance and the sugar water to slightly thicken.

Step 2: Filling preparation
- Wash the mung beans thoroughly several times until the water runs clear. Then put all the mung beans in a large bowl, soak them in 500ml of warm water for 30 minutes.

- Peel and finely chop the purple onion, then sauté until golden brown.
- After soaking, put the mung beans in a pot, add water to cover them completely. Place on the stove and cook until tender.
- Once the mung beans are soft, transfer them to a large bowl. While they are still hot, mash them smoothly with a spoon.
- After the mung beans are mashed, add 1 tablespoon of sugar and sautéed purple onion, mix until all ingredients are well combined.
- Clean hands and roll the mung beans into small, round balls. Estimate the filling depending on the size of the cake.

Step 3: Outer layer preparation
- Slowly pour 300ml of boiling water and 4 tablespoons of cooking oil into 350g of glutinous rice flour (keep 50g for the dough). Mix gradually while stirring until the glutinous rice flour mixture becomes very sticky and wet. Cover tightly for 15-30 minutes.
- Sprinkle some dough on the table surface, place the kneaded dough on top. Knead into a long strip about 20cm. Once formed, cut the dough strip into 8 equal parts.

- Flatten the divided dough balls into circles, ensuring they are twice the diameter of the mung bean filling.
- Place the prepared mung bean filling in the center of the rolled-out dough circle. Then carefully seal it shut. The filling and dough must fit tightly together without any gaps or air pockets. This prevents the cakes from bursting during cooking.
- Roll the shaped dough balls between your palms to make them smooth and round.
- Place a food wrap sheet on a plate. Gently place each dough ball on top, leaving a small gap between them to prevent sticking together.
- Bring 500ml of water to a boil over high heat. Gently add each dough ball to the boiling water. Stir lightly with a spoon to prevent sticking. Boil until the dough balls float to the surface, about 2-3 minutes.
- Once the cakes are cooked, remove them to a bowl of cold water. Let them sit for 1-2 minutes, then remove and drain before placing them in a bowl of boiled sugar water. Sprinkle some sesame seeds on top before serving.
