- Ingredients for rice paper rolls:
+ Dried shrimp: 50 grams
+ Mung bean sprouts: 200 grams
+ Carrots: 1 piece
+ Chinese sausage: 3 sticks
+ Eggs: 3 pieces
+ Lettuce: 2 – 3 large leaves
+ Fresh herbs: as desired
+ Rice paper: 1 packet
+ Salt
- Ingredients for dipping sauce:
+ Garlic: 3 cloves
+ Filtered water: 30ml (2 tablespoons)
+ Cooking oil
+ Hoisin sauce: 30ml (2 tablespoons)
+ Sugar: 1 teaspoon
+ Crushed peanuts: 1 – 2 teaspoons
+ Chili sauce (optional)

How to make savory beef rolls:
Step 1: Prepare the ingredients
- Soak dried shrimp in warm water for about an hour until they plump up, then rinse off any dirt and drain well.
- Wash and peel mung beans, carrots, then julienne.
- Separate lettuce leaves, discard wilted parts, soak in warm water for about 20 minutes, then rinse thoroughly and drain well.
- Peel and finely chop garlic.
- Slice Chinese sausage.
Step 2: Making the filling and rolling the rolls
- Heat a little oil in a pan, add dried shrimp, carrots, mung beans to the pan, season with 1 teaspoon of salt. Stir-fry until the vegetables are cooked then turn off the heat.
- Crack eggs into a bowl, add a pinch of salt and beat until well combined. Pour the beaten eggs into a pan to make an omelette, when the top of the omelette is still slightly runny, quickly roll it up and remove from the pan. Let it cool slightly then slice into small strips.

- Using the same pan, discard excess oil and fry the Chinese sausage for about 7 minutes to reduce the fat content.
- Place a rice paper on a clean flat surface (you can line it with clean paper), layer the carrots, mung beans, dried shrimp, Chinese sausage, fresh herbs, and lettuce on top, then roll it tightly with your hands. Roll each one until all the ingredients are used up.
Step 3: Prepare the dipping sauce and finish
- Mix hoisin sauce with water and sugar, stir gently until the sugar dissolves.
- Saute finely chopped garlic until it starts to turn golden brown, then pour the sauce mixture from above into the pan, and stir well.
- Simmer over low heat until the sauce mixture boils and thickens, then pour it into a bowl, sprinkle crushed peanuts and chili sauce on top.

- Arrange the beef rolls on a large plate, and serve with the prepared dipping sauce.
