- Dive into the depths of the ocean with 4 large sea crabs (approximately 1.5 – 2kg)
- Salt: 5 coffee spoons
- Chili powder: 1 coffee spoon
- Chilled water: ½ liter
- Smashingly fresh garlic: 5 cloves
- Cooking oil: 4 tablespoons
- Vinegar: ½ tablespoon
- Oyster sauce: 1 tablespoon
- Sugar: 1 teaspoon
- Sesame oil: 1 teaspoon
- MSG: ½ teaspoon
- Pepper: ½ teaspoon
- Sichuan pepper: ½ teaspoon (readily available at traditional Chinese medicine stores)
Procedure:
Step 1: Prepping the crab
- Upon purchasing the crab, leave it tied and flip it over. Then, using a knife, pierce into the cavity of the crab until it ceases movement.
- Remove the ties and proceed to thoroughly wash the crab. Then, separate the main body, remove the apron, and if the crab claws are large, smash them. Cut the crab in half or quarters as desired.
- Dissolve 4 teaspoons of salt in ½ liter of cold water, then soak the crab in it for about 2 hours before removing.
Step 2: Making spicy salt and chili crab
- Mix together the spices, including finely chopped garlic (reserving some for frying the crab), pepper, Sichuan pepper, ½ teaspoon sugar, MSG, sesame oil, and chili powder.
- Heat the pan and pour in 4 tablespoons of cooking oil, bring to a boil, then add the remaining garlic to infuse flavor before removing it. Next, fry each part of the crab (main body, claws, crab meat) until golden brown, then transfer the crab to a plate.
- Pour out excess oil from the pan, leaving about 2 tablespoons, then add the spice mixture to the oil and bring to a boil. Add the crab to the pan and toss until well-coated with the spices. Stir-fry over high heat for about 10 to 15 minutes, then turn off the heat.
