Cloud cake, also known as rainbow cake. This is a type of sweet cake with incredibly vibrant colors, soft, chewy, and fragrant with the aroma of coconut milk. Unlike mung bean layer cake, cloud cake doesn't have a layer of green beans. When eating, you don't need to dip it in any condiment and it still tastes delicious and attractive. Additionally, you can pair it with a bowl of coconut milk dessert, various jellies, and tapioca pearls to enhance its rich flavor.

2. How to make cloud cake
In the recipe below, Mytour uses pre-made vegetable powder available at pastry shops. You can substitute it with fresh vegetable juice.

Prepare ingredients
- 185g cornstarch
- 35g rice flour
- 75g ground sugar
- 185g coconut milk
- 1/4 teaspoon arrowroot powder or 10g turmeric leaves
- ½ teaspoon beetroot powder or 1 fresh beetroot
- ½ teaspoon glutinous rice leaf powder or 10g fresh glutinous rice leaves

Steps to follow
Step 1: Prepare flour mixture
- Sift and put into a bowl 185g cornstarch + 35g rice flour + 75g ground sugar + a pinch of salt. Stir well with a whisk.
- Add 2 teaspoons of vegetable oil + 185g coconut milk into the flour bowl. Stir well with a whisk. You will get a smooth batter, not lumpy.
- Divide the batter into 4 equal parts (each part 120g), pour into 4 separate bowls.
Note: This recipe uses 4 colors so divide the flour into 4 parts. If you want more colors, divide into smaller portions and use additional syrups/powders for different colors.

Step 2: Mix colors
- Prepare bowl (1), dissolve 1/4 teaspoon arrowroot powder in 65g distilled water, then pour into flour bowl (1) and stir well. Sift to remove residue.
- Prepare bowl (2), dissolve 1/2 teaspoon beetroot powder in 65g distilled water, then pour into flour bowl (2) and stir well. Sift to remove residue.
- Prepare bowl (3), dissolve 1/2 teaspoon glutinous rice leaf powder in 65g distilled water, then pour into flour bowl (3) and stir well. Sift to remove residue.
- Finally, mix the last portion of flour with 60g water (to create the white cake part).

Step 3: Steam the molds
- Brush a layer of vegetable oil inside the molds.
- Place water in the steamer pot on the stove to boil. Cover the lid with a cloth to prevent water droplets from falling onto the cake, avoiding the cake's surface becoming porous.
- When the water in the pot is boiling, place the molds in the steamer and steam them for about 7 - 10 minutes. This is done to preheat the molds before adding the cake batter.

Step 4: Steam the 9-layer cloud cake
Use a spoon to evenly divide the batter into portions
Pour each portion of batter slowly into the mold. Start with the pandan leaf batter, cover the lid and steam for 2-3 minutes. After 2 minutes, when the surface of the cake sets, pour another layer of batter on top, cover the lid and steam for an additional 2 minutes. Repeat the process with the remaining colors.

Divide the batter into 9 equal portions to create a visually appealing 9-layer cloud cake.
After pouring the final layer of color, cover the lid and steam for an additional 10 minutes.
Use a bamboo skewer to test if the cake is cooked by inserting it into the center of the cake; if the skewer comes out dry without any crumbs sticking to it, the cake is cooked.
Remove the molds, let them cool completely, then remove the molds.
Step 5: Cut the cake
Use a sharp knife to slice the cake decisively (avoid sawing back and forth).
Store the 9-layer cloud cake in the refrigerator and use within 3-5 days.

4. Handy tips for making delicious and beautiful 9-layer cloud cake
If using natural vegetables
- Wash the turmeric leaves thoroughly, boil them for a while to extract the color. Let it cool and strain to get 65g of colored water.
- Peel and clean the beetroot, chop finely, put it in a blender or juicer to get 65g of beetroot juice.
- Wash the glutinous rice leaves, drain, put them in a blender with a little water and blend until smooth. Then strain to get 65g of thick glutinous rice leaf extract.
- Then you proceed to mix the colored water with cornstarch to create a liquid mixture as in step 2.
Tips for cutting and storing cakes beautifully
- When cutting the cake, use plastic wrap to cover the knife to prevent sticking. Press the knife firmly to cut the cake beautifully.
- If the cake stored in the refrigerator becomes hard, before eating, leave the cake out for about 10 minutes or microwave it for 20-30 seconds, the cake will soften again.
