No need to spend hours steaming or struggle with grinding liver, with this method you can effortlessly create a tantalizing pate in no time.
Pate originates from France, consisting of a smooth blend of meat, animal liver, and various spices. In Vietnam, pate is commonly referred to as ground liver as it's predominantly made from animal liver. Unlike its foreign counterparts, Vietnamese pate uses minimal spices and herbs. This is a type of pate that I absolutely adore, often made on weekends for the whole family. What's special about this pate is its simplicity; it doesn't require much time or effort. Just a little patience and you'll have a delicious pate ready.

Ingredients for making liver pate:
- Chicken liver: 300 grams
- Ground pork belly: 150 grams
- Soft bread rolls: 3 slices
- Unsweetened fresh milk: 200 – 300 ml
- Shallot: 1 small bulb - Garlic: 2-3 cloves
- Unsalted butter: 2 tablespoons
- Salt, black pepper
How to make liver pate:
Step 1:
- Clean the chicken liver and soak it in fresh milk for 30-45 minutes to remove toxins and enhance its flavor.

- After soaking, rinse the chicken liver with water, remove any veins, and slice it thinly.
- Peel and wash the shallot and garlic, then finely chop them.
Step 2:
- Add butter to a hot pan, once melted, sauté the shallots until fragrant for about 2 minutes.
- Add the ground liver and pork to the pan and sauté until the mixture is about 80% cooked, then turn off the heat. Season with salt and pepper to taste.
- Soak the bread slices in fresh milk for 1-2 minutes, ensuring they are fully submerged but not soaked for too long to avoid sogginess.
- Add the bread to the pan, sauté with the liver, meat, and shallots. Then add the garlic to the pan, stir well, and cover to simmer for 5-10 minutes until the liver and meat are thoroughly cooked. Adjust seasoning if necessary.

Step 3:
- Use a spoon to mash the liver until smooth, mixing it well with the ground meat, shallots, and bread.
- Transfer the mixture to a bowl or container, let it cool, cover tightly, and store in the refrigerator. If stored in a cool place, the pate can be used within 3-4 days, while in the freezer, it can last for 20-30 days depending on whether it's kept at a higher or lower temperature (freezer temperature: 3-5 degrees, shelf life is 20 days; 0-3 degrees, shelf life is 30 days).

Note:
- Choose fresh chicken liver, dark red or light purple in color, smooth surface, and soft to touch. When pressed, the liver will leave a dent.
- If you prefer pate that is not too fatty or dense, you can use ground lean meat, ground chicken, or omit the bread when making pate.
- With this method, the pate will not be as smooth as when using a blender, but instead, it will be very fragrant and flavorful, with a rustic appearance.
Once finished, the pate boasts a delightful brown color, with the liver blending seamlessly with the fragrant shallots and a subtle hint of milk. The pate has a rich, creamy taste, devoid of any overpowering scent of herbs or spices. It's a delicious and nutritious dish, as liver is rich in protein and vitamin B12, which helps prevent anemia, memory loss, slows down aging, and boosts the body's immune system. Moreover, pate is incredibly versatile; you can enjoy it with Italian pasta, warm baguettes filled with fresh herbs, or even paired with hot rice and a sprinkle of crispy shallots in oil. Just thinking about it makes one's mouth water.
