On rainy days, a plate of hot and spicy corn and shrimp stir-fry becomes even more enticing. Ingredients:
- Glutinous corn (or sweet corn): 2 ears
- Dried shrimp: 50 grams
- Scallions, dried shallots, cooking oil, butter, seasoning salt

How to Make Corn and Shrimp Stir-Fry:
Step 1:
- Purchase corn, remove kernels, rub to clean, then wash twice with water and drain.
- Peel and wash dried shallots, then finely chop.
- Pick and wash fresh scallion leaves, removing roots, old leaves, and wilted leaves, then finely chop.

Step 2:
- Place a pot of water on the stove, add a teaspoon of salt. Bring water to a boil, then blanch the corn for about 2-3 minutes, then drain in a colander to remove excess water.
- Heat a skillet on the stove, add a tablespoon of cooking oil and heat it up, then start adding the dried shrimp and stir-fry.

- Season with spices to taste, then set aside the shrimp on a separate plate.
- Add another tablespoon of cooking oil to the pan, then sauté the finely chopped dried shallots until fragrant. Continue to add the corn and stir-fry thoroughly, season with spices to taste.
- When the corn firms up, add 5g of butter and stir-fry evenly for fragrance. Then turn off the heat, add the scallions and previously sautéed dried shrimp, and stir evenly. Transfer the corn and shrimp stir-fry to a plate and serve immediately while hot with chili sauce.
