Ingredients for serving 4:
- Abalones: 4 pieces
- Dried scallops: 50 grams
- Chicken feet: 300 grams
- Beef bones: 300 grams
- Chicken egg: 1
- Soy sauce: 1 tablespoon
- Ginger: 1 piece
- Oyster sauce: 1 teaspoon
- Seasoning powder: 2 teaspoons
- White wine: 1 teaspoon
- Arrowroot powder: 1 teaspoon
- Salt: 1 teaspoon
- Sugar: 1 teaspoon
- Coriander: 50 grams
How to cook abalone soup:
- Wash and drain the coriander roots
- Peel and wash the ginger, crush and extract some ginger juice (about 2 teaspoons) with filtered water

- Clean and slice the abalones, marinate with oyster sauce, sugar, salt, soy sauce, white wine, and 1 teaspoon of ginger juice for 60 minutes, then rinse with clean water and steam dry.

- Place the beef bones and chicken feet in a pot and simmer for 3 hours.
- During the bone simmering process, make sure to skim off any scum to keep the broth clear and free from any unpleasant odors.

- Add the dried scallops to the simmering broth for about 120 minutes. Add 1 teaspoon of ginger juice and white wine. Then add the abalones and cook for an additional 3 minutes. Finally, season to taste.
- When the soup is almost ready, mix arrowroot powder with a bit of water, then gently stir into the soup.

- Beat the chicken egg and slowly pour it into the soup pot.

- Serve the soup in a bowl, garnish with a few coriander leaves on top for decoration, and there you have a nutritious abalone soup.
