- Seasonings: salt, sugar
How to prepare bitter melon dipping with shrimp paste:
Step 1:
- Wash bitter melon thoroughly, slice thinly, soak in diluted salt water for about 10 minutes to reduce bitterness, then remove and rinse with water until clean, and drain.
- Place the bitter melon on a plate, put it in the freezer compartment of the refrigerator for about 10 minutes. If you don't have a refrigerator, you can soak the bitter melon in ice water (15 minutes).

Step 2:
- Peel and finely chop garlic. Wash and finely chop chili. - Put shrimp paste in a small bowl, add chopped garlic and chili (according to taste) and add a few drops of lime juice, then mix well. Add some filtered water to make the paste not too thick.
