How to Make Vegetable Tempura:
Step 1: Prepare the Batter
- In a large bowl, combine all-purpose flour, cornstarch, and ½ teaspoon of salt. Gradually add filtered water while stirring constantly until the batter is smooth and lump-free.
- Cover the bowl of batter with plastic wrap and refrigerate while you prepare the vegetables.
Step 2: Prepare the shrimp and vegetables
- Peel and devein the shrimp, removing the heads and the black vein along the back. Gently press along the shrimp's back to prevent curling when frying. - Peel and wash the sweet potatoes and carrots, then slice them into chunks or thin slices as desired. - Wash the purple eggplant and corn, then cut them into chunks.
- Soak the vegetables in a mild saltwater solution for about 5 – 10 minutes to prevent discoloration, then remove and rinse them thoroughly, allowing them to drain.
- You can blanch the vegetables in boiling water and then plunge them into ice water before frying to ensure even cooking.

Step 3: Tempura Frying Steps
- Place a pan on the stove, turn on low heat, and pour cooking oil and sesame oil into the pan at a ratio of 1:1 (since sesame oil has a strong flavor, mixing it with regular cooking oil will better suit Vietnamese tastes).
- Take the tempura batter out of the refrigerator and dip each ingredient into the batter. Wait until the oil in the pan is hot, without any more bubbles, then add the shrimp and vegetables.
